2. Rice
Among the over thirty varieties of sake rice found in Japan, we will cite the most famous of them.
The YAMADA NISHIKI also called "king of sake rice", has a strong and beautiful perfume scent to it. It is used in the brewing of most of Daiginjo Sake. The OMACHI has a discrete perfume, and a specific hearthy flavor. The GOHYAKUMANGOKU produces clear and soft sake with a delicate taste. The KOSHIIBUKI is a rice with complex aromas, and gives a nicely scented and slightly sweeter sake. |
