    Sakes

    Sake, called "Nihonshu" in Japanese, is the emblematic alcoholic beverage in the country of the rising sun. Sake is produced from the fermentation of rice and contains about 15% of alcohol. Japanese sake is a refined drink, to be enjoyed fresh or sometimes heated, as an aperitif or during the meal. It accompanies Japanese food, of course, but also goes perfectly with modern Western cuisine, and becomes a very interesting component when used in sake based cocktails.

    Subcategories

    • Honjozo Sakes

      For the production of Honjozo sake, the rice is milled up to 70% minimum. It is possible to add alcohol at the end of fermentation. Honjozo sake is a rather dry sake, pleasant and esay to drink. It can be drunk at any occasion, and is perfect to drink as a heated sake. It is up to you to define the perfect temperature for a hot sake.

      Choose Honjozo sake, for easy-drinking sake with typical Japanese pairings such as yakitoris or nabes for example. They can be enjoyed over a wide range of temperatures, from cool to room temperature and are perfect for preparing hot sake.
    • Junmai Sakes

      A Junmaï sake is defined as a sake with no addition of distilled alcohol at the end of fermentation (the literal translation would be: Jun=pure, maï=rice). Junmaï are therefore the pure result of fermentation of rice by yeasts. As a general rule, the rice used is polished to a minimum of 70%, but there is no rule imposed.

      Choose a Junmaï if you're looking for a rather rich and expressive sake, a sake that's easy to drink. To serve all along the meal and, why not, at different temperatures, cool, room temperature, or as a hot sake.
    • Ginjo Sakes

      Ginjo sakes have light, floral, and fruity scents. In the mouth they are delicate, fragrant and complex. When it comes to Ginjo sakes, the rice is polished more than 60%. Special types of yeasts are used to ferment the rice, and all of this takes place at a very low temperature.

      Choose a Ginjo if you are looking for sake on floral and fruity notes, to enjoy as is, fresh or at room temperature, as an aperitif or during the meal, accompanied by a simple and refined cuisine.
    • Daiginjo Sakes

      Are you looking for a high-end product? It's here with this Daïginjo! Sakes of the utmost refinement, complex flavours, unmatched fragrances. In the case of daïginjo sakes, the rice is polished up to 50% minimum. Daïginjo is considered as the "grand cru" of every brewery!

      Choose a Daïginjo sake if you are looking for excellence with absolute refinement sake. To serve cold, jsut as a pure tasting experience or on a super delicate cuisine. Or even... to make a beautiful gift!
    • Kimoto Yamahai Sakes

      The Kimoto technique allows a natural development of the yeast that avoids the adding of lactic acids. It takes time to create a Kimoto sake; these sakes are therefore more powerful, with rustic flavours. In the process of sake, the brewers add lactic acid during the fermenting process to help the development of the yeast that needs this essential element. It's a habit that was introduced at the beginning of the 1900's.

       Choose a Kimoto / Yamahaï if you like powerful sakes, sometimes rustic, with a nice acidity. Sake to accompany rich cuisine, dishes with sauce, or strong cheeses.
    • Nigori Nama Happo Sakes

      Namazake sake is an unpasteurized sake; Nigorizake is an unfiltered sake. These are amazing sakes, full of freshness, and are comparable to natural wines! Under the tongue there are unique notes of ferments. Exclusive sensations to this type of sake. Beware, they are to be drunk soon after opening.

      Choose a Nama sake, or Happo, if you're ready to discover the lively, sometimes breezy or sparkling side of this type of sake. For nigori, you will have something very rich, not always easy to marry with a dish, but can work wonderfully when the pairing is a success. Try with desserts!
    • Koshu sakes

      Koshu sakes are aged in casks or vats for at least 3 years. Although it is often assumed that sake is best drunk fresh, Koshu is far from just a curiosity, and a few breweries are making a real specialty of that technique. We have here high quality products, smooth sakes, with complex notes of ripe fruit, cooked fruits, with notes of fino or rancio wine. 

      Choose a Koshu sake if you like full-bodied sakes, complex notes of ripe fruit, cooked and jammy fruits, Fino or Rancio notes. These are quite unconventional and rare sakes.
