A Junmaï sake is defined as a sake with no addition of distilled alcohol at the end of fermentation (the literal translation would be: Jun=pure, maï=rice). Junmaï are therefore the pure result of fermentation of rice by yeasts. As a general rule, the rice used is polished to a minimum of 70%, but there is no rule imposed.
