    Junmai Sakes

    The Junmaï sakes are rich and endowed with beautiful acidity.
    The rice of these sakes are polished up to 70%. They are the pure fruit of fermentation of rice by yeast and koji, as there is no distilled alcohol added. It is possible to serve junmaï sakes at different temperatures, cold, room temperature or hot.

    <p style="text-align: justify;">A very special project by Imayo Tsukasa with this sake produced in Kioke Jikomi, in cedar wood barrels. The difficulty was to adjust the balances, without scarring too much.
