Hayashi Honten is located along the southern border of Gifu Prefecture, central Japan. The brewery is owned by a woman, representing the fifth generation of a traditional family brewery.
In this selection we have the opportunity to taste three special sakes made from a ompletely different methods. A Daiginjo, for which a very controlled process is used, with a precise rice milling (over 40%) a Yamahai, a more rustic form of sake, produced using an older method, and an easy drinking Junmaï.
