Hayashi Honten is located on the southern border of the Gifu region, almost perfectly in the middle of Japan. This brewery is the property of a woman, who is the 5th generation owner of this typical family brewery. Hayashi Honten is very interesting because of the variety of the techniques they master for the production process; from ancient techniques to make Yamahaï, to the most modern one giving the purest Daïginjo, without forgetting the capacity to age sake and produce a very nice Koshu.

<p style="text-align: justify;">Golden Amber is a 12-year-old Koshu sake, four of which are oak barrels for whiskey. The result is incredibly complex. A dark amber sake, a nose marked by caramel almond.<br /><br /><strong>Woody, deep, mature</strong><br /><br /><span style="color: #9b9b9b;">72cl - alc. 18% vol.</span></p>
<p style="text-align: justify;">A sake light floral nose, but incredibly deep at the same time. It is dry and precise, powerful with a rich umami. <p style="text-align: justify;">A sake with an elegant nose, little marked, and especially very fresh. The palate is remarkably structured, deep and complex, with good acidity. We return on a lot of freshness and precision in the final. A Daïginjo sweetness little present and therefore enjoyable. <br /><br /><strong>The high-end sake of the Hyakujuro series. <p style="text-align: justify;">A sake with a deep nose, marked by sweet and mellow notes. Iit becomes light in mmouth, creamy, with milky notes. Acidity is present. It is an easy drinking Yamahaï, lighter than other sakes in the same catégory.
