Sayori sake is a Nakadori Junmaï, the equivalent of a juice of drops (naka = middle, dori = take). Only the liquid flowing just before the press is retained. It is a sake characterized by a beautiful tension and minerality.

Tense, dry and salty. A really perfect sake on the length of the meal.
