Produced from rice grown in Shimane, the rate and method of milling are interesting. Only 90%, and a work done directly by the toji himself, using a seimai machine ... for consumption rice! A technique that can seem very crafty, even barbaric, for a sake made available to the public, but that's without counting the level of completeness achieved by the toji of Sakemochida Honten. A perfect mastery of the material for a rather unique result: a sake with fruity banana aromas mingle marvelously with cereals and the flavor of rice. And precisely because it is not very polite, the sake is unctuous and rich. Mastery brings the rest, in control and balance, between acidity and umami, this sake remains exquisite, complex, with a surprising freshness.
