About the brewery: Sogen Shuzo is located at the northern tip of the Noto Peninsula, north of Ishikawa Prefecture, on the west coast of Japan. Founded in 1768, it is the oldest brewery in the region. Sogen Shuzo is said to be the birthplace of the Noto Toji guild, one of the country's four major production streams, reputed to be the origin of sakes with powerful style and exuberant flavours. The production is carried out by Yukio Sakaguchi, a luminary in the world of toji, recognized throughout the country as a true "master of sake". Its personality, expertise and numerous recognitions he has accumulated over the years make him a source of pride for the region. He continues to bring the Noto Ryu to life with the most beautiful energy, aimed at the young Tojis, but also by bringing his own variations of style to the daily life.
