Kinokuniya Junmai is rich, powerful, while being smooth, with a nice roundness in mouth. Fruity, with melon and white peach notes. A well balanced sake with good vivacity. Kinokuniya Junmai goes very well on marinated fish like mackerel, or smoked fish. On strong cheeses and fruits.
A sake made from a rice blend. The Yamadanishiki, which is used for the Koji rice (the Kojimaï) will impart its structure. Then the Kakemaï (the rice added when fermentation) is Dewasansan rice ; it brings aromas and vivacity.
